Roasting Veggies

It's that time of year where we are craving those dishes deep in flavor and comfort.
A good way to use up the many root vegetables is simple roasting. The key is to roast them at a high heat to caramelize and concentrate the flavors.
400 degrees with a simple dressing of olive oil, sea salt and fresh herbs is all it takes. Roast them for 30-40 minutes .
