It's that time of year where we are craving those dishes deep in flavor and comfort.
A good way to use up the many root vegetables is simple roasting. The key is to roast them at a high heat to caramelize and concentrate the flavors.
400 degrees with a simple dressing of olive oil, sea salt and fresh herbs is all it takes. Roast them for 30-40 minutes .

What a great night at the home of Lester and Julie Tobias, raising money for the Dark Sky Association. We served a direct from the farm menu, including purple potato salad with green beans and edamame,  baby carrots w/ turmeric & ginger, skirt steak w/ pickled onions & horseradish and Spring Pea Sips w/ Creme Friache & Crouton crumble.
Can't wait till the next delicious night at the Tobias Farm.
